Clarification to the School Food Safety Requirements - Cleaning Procedure

RE: Clarification to the "School Food Safety Requirements" - Cleaning Procedure

The following section of the School Food Safety Requirements has been changed to bring it into alignment with the 1999 Food Code, the source document. Additions are in bold text and the text in [ ] is deleted. This change is being made to improve the application food safety rules and does not affect the integrity of the School Food Safety Requirements.

2-301.12 Cleaning Procedure* (Amended)

(A) Except as specified in (B) of this section, food workers shall clean their hands and exposed arms by using a cleaning procedure of approximately 20 seconds that includes:

(1) Vigorous friction on the surfaces of the lathered fingers, finger tips, areas between the fingers, hands and arms for at least 10 to 15 seconds, followed by;
(2) Thorough rinsing under clean, running water in a lavatory equipped as specified in 5-202.12 [deleted (100o F)].

(B) If approved and capable of removing the types of soils encountered in the food operations involved, an automatic handwashing facility may be used by food workers to clean their hands.
