Change in School Food Safety Inspection Requirement – Outdoor Barbecue |

The following section of the School Food Safety Requirements has been changed to
bring it into alignment with the 1999 Food Code, the source document.
The text in [ ] is deleted. This change is being made due to an unintended negative
impact on the service of program meals in outdoor settings and does not affect the
integrity of the School Food Safety Requirements.
3-306.15 Outdoor Barbecue, Serving Consumers. (Amended)
- Consumers may not serve themselves from an outdoor barbecue grill.
- The food worker may serve:
- A food worker who brings a container or plate from the food establishment to the
barbecue and who returns the food to the food establishment for further
processing or service; or
- The consumer directly.
[(C) Except for non-potentially hazardous condiments, such as hot sauces, ketchup,
mayonnaise, mustard, pepper, relish, salt, and sugar, no other food may be served
outside of the food establishment. (This does not apply to school Sponsors who have
an occasional outdoor picnic or barbecue.)]
This change is effective as of the date of this letter, November 17, 2010. If you have
